
Breakfast Casserole isn’t just for breakfast . . . don’t let the name fool you! This is comfort food through and through and is just as good for supper as it is first thing in the morning. Other than frying the sausage and dicing the onion, the main activity is measuring and stirring things together. This is a great recipe for resident’s who want to help with the cooking.
Ingredients:
1 lb of pork sausage (we use mild)
1/2 a yellow onion, diced
2 cups of hashbrown or shredded potatoes
5 eggs
1/4 c. plain greek yogurt
1/2 c. cottage cheese
2 cups shredded cheddar cheese
1/2 c. shredded mozarella or swiss cheese
Directions:
Preheat oven to 350 degrees. Grease a 8 x 8 baking dish – we like to use a shot of olive oil in our Misto sprayer. Brown the sausage and diced onion together in a pan over medium-high heat, breaking the sausage into small pieces. While the sausage cooks, combine the potatoes and cheeses, stirring together until well mixed. In a large bowl, combine the eggs with the plain greek yogurt, whisking with a fork. Pour into the bowl with the cheese and potatoes, stirring until well mixed. When the sausage is thoroughly browned, pour into the bowl with the potatoes, cheese and eggs – stir to combine. Pour into the greased baking dish. Bake for 40-45 minutes. Top with an additional 1/4 c. of cheddar cheese and let sit for 5-10 minutes to allow the eggs to set.
