White Chicken Chili

While some people LOVE spicy foods, others like their food pretty bland. When we cook, we use basic spices, but we have others available for individuals to use at their leisure. Jalapenos. Siracha sauce. Hot Sauce. Red pepper flakes.

This requires a crockpot or slow cooker and is great for those days when there is a LOT going on, appointments or activities.

Ingredients:

1/2 medium red onion, diced

2 gloves garlic, minced

1 T Butter

1 lb chicken breasts

2.5 cups chicken broth

1/2 t. salt

1/2 t. pepper

1/2 t. smoked paprika

1 t. cumin

1/2 t. oregano

1-1/2 t. lime juice

3 T. fresh cilanto, chopped

1 can diced green chiles

2 can great northern beans, drained

8 oz block of cream cheese, softened

1 cup frozen roasted corn

Directions:

In a small skillet, melt butter. Add diced red onion and minced garlic, sauteing until tender. While cooking, place chicken breasts, spices, broth, green chiles, lime juice and cilantro in crockpot. Stir in cooked red onion and garlic. Cook on low for 5-6 hours. After draining the great northern beans, take 1 c. of the beans and mash w/ 1/4 c. of juice from the crockpot to thicken the soup. This can be done in a food processor or small food chopper. Remove the chicken from the crockpot and shred with forks, return to crockpot. Stir in the beans, bean paste, and corn. Cut the cream cheese into blocks and stir in to the chili. Stir to help melt the cheese. Cook for another 30 minutes.

Ladle into bowls and serve with tortillas or tortilla chips, cheddar cheese, avocado slices, or guacamole.
